French Onion Soup

 
 

Ingredients

5 medium onions
3 tbsp/45 mL butter or margarine
1-1/2 quarts/liters water
1/4 cup/60 mL Watkins Beef Soup Base
3 tbsp/15 mL Watkins Onion Soup Base
1/4 tsp/1.2 mL Watkins Black Pepper 
Pinch of Watkins Cayenne Pepper
Pinch of Watkins Thyme

6 slices French bread

Butter or margarine

1 cup/250 mL (4 oz/113 g) shredded Swiss cheese, preferably Gruyère

 

Cooking Directions

Peel and thinly slice onions. Heat the 3 tbsp/45 mL butter in a heavy 3-quart/liter saucepan over low heat; add onions and cook slowly, stirring until golden in color, about 10 minutes. Gradually blend in water, soup bases, and seasonings. Bring to a boil; cover and simmer about 15 minutes. Meanwhile, toast one side of bread under broiler until golden brown. Butter untoasted side and sprinkle slices with 1/4 cup/60 ml cheese; broil until cheese is melted. To serve, place hot soup into oven-proof bowls or mugs; float French bread slices on top. Sprinkle with remaining cheese; broil until cheese is bubbly and brown.

Makes 6 servings.

Ingredients

8 oz/227 g cream cheese
1/4 cup/60 mL sour cream
4 tbsp/60 mL Watkins Crab Snack and Dip Seasoning
1/4 cup/60 mL crabmeat or imitation crab

 

Cooking Directions

Whip cream cheese until softened. Fold in sour cream, seasoning and crab. Let stand for 30 to 60 minutes to allow flavors to develop. Serve on melba toast or assorted crackers.

Ingredients

3 tbsp/45 mL Watkins Chai Latte
2/3 cup/160 mL hot water
1 cup/250 mL flour
1-1/2 tsp/7.5 mL Watkins Baking Powder
1 tsp/5 mL Watkins Cinnamon
1/4 tsp/1.2 mL Watkins Cloves (Ground)
1/4 tsp/1.2 mL Watkins Ginger
1/4 tsp/1.2 mL Watkins Sea Salt
1/2 cup/125 mL butter or margarine
3/4 cup/180 mL granulated sugar
2 eggs
1 tsp/5 mL Watkins Original Double-Strength Vanilla (11 oz)

Chai Glaze
2 tbsp/30 mL butter or margarine
1-1/2 cups/375 mL powdered sugar
1 tsp/5 mL Watkins Original Double-Strength Vanilla (11 oz)
1/4 tsp/1.2 mL Watkins Cinnamon
Reserved 2 tbsp/30 mL prepared Watkins Chai Latte from cake recipe
Grated cinnamon stick (optional)
 
 

Cooking Directions

Heat oven to 325°F/170°C. Grease and flour a round cake pan (8"/20 cm). Stir hot water into Chai Latte until blended. Measure 1/2 cup/125 mL for cake and set aside 2 tbsp/30 mL for glaze.

Mix flour, baking powder, 1 tsp cinnamon, cloves, ginger and salt. Set aside. Beat sugar and butter in large bowl with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in eggs and vanilla until smooth and blended. Gradually beat in flour mixture alternately with 1/2 cup Chai Latte until smooth. Pour into pan.

Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to wire rack. Cool completely, about 1 hour. Spread Chai glaze over top of cake, allowing some to drizzle down side. Sprinkle with additional cinnamon.

For glaze, melt butter in 1-quart/litre saucepan over medium heat. Stir in remaining ingredients until smooth. Drizzle glaze on cake. If desired, grate cinnamon on top as garnish

Helping the Victims of Hurricane Katrina

Hurricane Katrina Help and Donations!

 

As many in the United States, the devastation caused by Hurricane Katrina has really caught us off guard.  We immediately felt that we wanted to do something to help, so Beth started researching how we could help.  She did her footwork and contacted several agencies in Houston, Texas (where a large amount of the victims have been shipped to) and here is what they told her.

Mexican Pork Salad

 This full-meal salad absolutely beams with bright colors and flavors! Not only will it impress your dinner guests, but it’s easy to make, and makes a great meal on a hot day.

Ingredients

1 pound/454 g pork tenderloin, cut into 3x1/2x1/4-inch/7x1x5-cm strips
2-1/2 tsp/12.5 mL Watkins Chili Powder
1-1/2 tsp/7.5 mL Watkins Seasoning Salt
3/4 tsp/4 ml, crushed Watkins Oregano
3/4 tsp/4 mL Watkins Cumin
4 cups/1 liter shredded lettuce
2 medium oranges, peeled, sliced and quartered
1 small red onion, sliced and separated into rings
2 tsp/10 mL Watkins Onion Liquid Spice
1/4 cup/60 mL orange juice
1 tsp/5 mL cider vinegar
 

Cooking Directions

Combine pork strips and seasonings; toss well to coat. Let stand 10 minutes. Place lettuce on serving platter; arrange orange and onion slices over lettuce. Heat Liquid Spice in large frying pan. Add pork strips and stir-fry over medium high heat 5 to 7 minutes or until pork is tender. Add orange juice and vinegar and cook until mixture begins to thicken. Spoon pork and sauce over lettuce. Serve immediately.

Salmon Pasta Salad

Ingredients

2-1/2 cups rotini or rotelli pasta
1 tbsp Watkins Honey Mustard
3 tbsp fresh lemon juice
1 tbsp Watkins Dill
1 tbsp
1 tsp Watkins Lemon Peel
1/2 tsp sugar
1/4 tsp freshly-ground Watkins Sea Salt
1/4 tsp, more or less to taste Watkins Black Pepper —6 oz
1 to 4 tbsp Watkins Original Grapeseed Oil
2 tbsp reduced-calorie or regular sour cream
1 can (16 oz) sockeye salmon, drained and flaked (skin and bones may be removed if desired)
1/2 cup thinly-sliced red onion

 

Cooking Directions

Cook pasta according to package directions. Drain and rinse with cold water; set aside. Whisk together the mustard and next 7 ingredients. Gradually whisk in the oil a tablespoon at a time until desired consistency is achieved. Pour half of this mixture over the cooked pasta and toss well. To the remaining sauce, add the sour cream and salmon; mix gently. Add the salmon mixture and the onion to the pasta; mix well. Chill until served.

Recipes from the Watkins International Awards Banquet

The food at the Watkins International Awards Banquet was fabulous!!!  And of course almost all of it was made with Watkins Products.  Here are the recipes they used for this incredible feast:
 
WATKINS Vinaigrette
1/2 tbsp WATKINS German Style Mustard
1/4 cup Red Wine Vinegar
2 tsp WATKINS Italian Salad Dressing Blend
3/4 cup WATKINS Garlic & Parsley Grapeseed Oil
WATKINS Sea Salt and sugar to taste
 
Whisk vinegar and seasoning into mustard.  Slowly whisk in oil.  Let stand 30 minutes to allow flavors to develop.  Season with salt and sugar as needed.  Serves 4.
 
 
Six-Onion Mashed Potatoes
4 to 5 lbs potatoes
8 oz cream cheese
1 cup sour cream
6 tbsp WATKINS Six-Onion Soup Base (*this is a seasonal product available Sept - December only!)
1/4 tsp WATKINS Onion & Garlic Pepper
 
Cook Potatoes.  Mash with cream cheese and sour cream. Add soup base and seasoned pepper.  These can be made and refrigerated a day ahead of time and heated in oven, microwave or crockpot before serving.  Makes 8 servings.
 
 
 
Grilled Top Sirloin
 
2-3 lbs of tender steak
1-2 tsp WATKINS Cracked Black Pepper
1/2 tsp freshly-ground WATKINS Sea Salt
1/8 tsp WATKINS Onion Granules
1/8 tsp WATKINS Garlic Granules
 
Combine pepper and remaining ingredients; sprinkle evenly over both sides of steak, pressing down firmly with hand and spatula.  Let stand 30 minutes; grill 4 to 5 inches from coals until done to your liking.
 
 
Watkins Spicy Lemon Baked Shrimp
 
1/4 cup WATKINS Original Grapeseed Oil
3 tbsp Lemon Juice
2 tsp Honey
2 tsp WATKINS Spicy Garlic Soy Sauce
1 1/4 WATKINS Parsley
3/4 tsp WATKINS Garlic Granules
1 lb Uncooked, large shrimp, peeled and deveined
 
Combine first 7 ingredients in 13 x 9 inch baking dish; add shrimp; toss to coat.  Refrigerate one hour.  Bake at 450 degrees until shrimp are cooked through, about 6 to 8 minutes, stirring occasionally.
 
 
 
Watkins Danish Pastry Topping (served on Cheesecake)
 
1/3 cup Light Corn Syrup
2/3 cup Brown Sugar
2 tbsp Butter
1/8 tsp Salt
1/3 cup Heavy Whipping Cream or Evaporated Milk
1 tsp WATKINS Danish Pastry Extract (*this is a seasonal product available Sept - December only!)
1/2 tsp WATKINS Vanilla
 
Combine first 4 ingredients in heavy saucepan; cook over medium heat, stirring occasionally, until mixture comes to a boil and all of the sugar is dissolved.  Removed from heat and cook slightly, just until mixture begins to thicken.  Slowly whisk in cream until blended.  Stir in extracts, mix well.  Let cool completely. 
 
 
WATKINS Hazelnut Truffles
 
6 oz semi-sweet chocolate
4 oz cream cheese
1 1/2 cups powdered sugar
1/2 tsp WATKINS Double Strength Vanilla Extract
1 tsp WATKINS Hazelnut Extract (or WATKINS extract of your choice)
 
WATKINS Baking Cocoa, Powdered Sugar, Chocolate, Nuts, etc for decoration.
 
Melt chocolate in microwave on high for 60 seconds.  Stir and continue cooking on high for another 30 seconds or until completely melted.  Beat cream cheese until smooth.  Add powdered sugar and continue beating until well-blended.  Stir in chcolate, vanilla and extracts.  Refrigerate for 2 hours or until firm.  Shape into 1-inch balls.  Roll in cocoa, sugar, nut, etc or dip in melted chocolate.  Store in refrigerator.  Makes 3 dozen truffles.

Thank you WATKINS!!!

Well as I am scrambling to get us ready for the Watkins International Business Conference, my 2 year old decided it was time to color on her face with a marker.  I about DIED!  The timing couldn't have been worse, and I had visions of traveling through 3 airports and a hotel and even going on stage to receive my award, with a green faced cherub.  UGGGGHHHH! 

I wasn't sure what to wash her face with, so I grabbed my Watkins Shredscope Dish Soap and some warm water and started washing.  And it came RIGHT OFF!  No trace of green ink anywhere.  My infatuation with Watkins started a long time ago, but this just made it go deeper.  I LOVE WATKINS!!!

Mexican Vanillla Extract... Toxic?

One of my customers mentioned that she had been using Mexican Vanilla Extract.  And I remembered hearing that Mexican Vanilla Extract was not good to use and possibly toxic, but I couldn’t remember what the whole story was.  Well I decided to do a search online for it.  Here is what I found on ‘The Straight Dope’:

Dear Cecil:

Vacationing friends are always trying to give me a "gift" bottle of pure Mexican vanilla extract that they've purchased in a Tijuana pharmacy. I've heard that the Mexicans have a toxin in their vanilla that damages the liver. Are my "friends" out to get me? --Fred Rowley, Santa Clara, Utah

Cecil replies:

Could be, but I'm having a tough time imagining the scenario. "Fred, you SOB, you crossed me for the last time! Myrtle, hand me the Mexican vanilla." But you heard right about toxins. 

Vanilla fragrans, as genuine vanilla is known, is native to Mexico, and well into the 19th century makers of high-quality Mexican vanilla had a lock on the business. But competitors elsewhere in the world began stealing market share, and in the 1880s the first synthetic vanilla was developed in Germany. During the Mexican Revolution of 1910-'20 fighting devastated the gulf coast, the center of Mexican vanilla cultivation, and production dropped sharply. Faced with a flood of cheap ersatz product and little of the genuine article to sell, Mexican producers began making synthetic vanilla themselves. But Mexico was still known as the home of the world's best vanilla, so the producers didn't admit what they were doing. They disguised the artificial taste by adding coumarin, an extract of the tonka bean, Dipteryx odorata. Coumarin tastes and smells just like vanilla, only more so. One whiff and your rube tourist from Utah is likely to say, "Whoa, that's good!" No, that's bad. Coumarin has been shown to cause liver damage in lab animals. The Food and Drug Administration restricted it starting in 1940 and banned it outright from all foods and food additives sold in the U.S. in 1954. Many other countries have done likewise. 

Coumarin has its uses. A derivative called dicumarol is used as an anticoagulant (blood thinner). Under the trade name warfarin it's used to poison rats by causing internal bleeding. The 1983 article in FDA Consumer I'm getting this from says "there has been no indication that coumarin itself produces this blood-thinning effect in humans." I'm not so sure. Another FDA Consumer article about the dangers of herbal tea told of a young woman who drank large amounts of a home-brew tea containing coumarin and suffered abnormal menstrual bleeding. So yes, I'd say toxic. On the plus side, it's very reasonably priced. You can get a quart for only a few bucks. 

Most of the vanilla sold in Mexico is synthetic, though it doesn't all have coumarin in it. Telltale signs of the fake stuff: clear, or dark and murky (the real stuff is amber colored and translucent), low alcohol content (genuine vanilla extract contains at least 35% ethyl alcohol), laughably low price.

How did we ever live without Meat Magic?

We received a bottle of Watkins Meat Magic in our PEP Pack (Promotional Earnings Program Pack) in March.  I probably would have never even thought about it or even remembered to order it if it hadn't come in our PEP Pack.  There are so many fabulous products offered by Watkins, that I still haven't gotten to try them all. 

I have drifted off subject ... this is about Meat Magic.  Anyway, we got the bottle of Meat Magic in our PEP Pack and I decided to give it a try.  So that night I put some on our Pot Roast before cooking it.  Prior to that night, my husband had always said that my potroast was PERFECT, best he ever had.  I was really curious if he would be able to tell that I did something different this time.  Well he certainly did, and he said "THIS IS REALLY GOOD!  What did you do different?"  I told him I had added basted the roast in WATKINS Meat Magic before putting the WATKINS Onion Soup Base on top of it (as I have always done).  He said "NOW your potroat is definitely the BEST!"

Since then I have marinated our pork chops in it before baking, added it to hamburger meat for burgers, added it to our meatloaf, put it on our steaks....even put it in the water we boiled our ribs in.  This is one of the most fabulous products I have ever tried. 

Here is the description Watkins has for it:

Brings out natural meat flavors; helps prevent shrinkage and promote tenderness by sealing in meat's natural juices.  One bottle enhances more than 30 pounds of meat. (325mL/11 fl. oz.)

I always make sure we have an extra bottle in our cupboard, so we never run out!

Watkins Baby Back Ribs

We tried this recipe this weekend, and there wasn't a single rib left.  Our two year old was very possesive of her ribs too, she wouldn't let daddy have them.  They were that good!

INGREDIENTS:

2 Racks of Baby Back Ribs
WATKINS Meat Magic
WATKINS Garlic Liquid Spice
WATKINS Honey Barbeque Sauce Concentrate
Ketchup (for sauce.  Mix as directed on Watkins HBC Label)

Cut baby back rib racks in half so they will fit in a pot.  Fill a pot (big enough to put the ribs in) half way with water.  Add 1/4 cup Watkins Meat Magic and 1 Tbl. WATKINS Garlic Liquid Spice to the water, and then add ribs.  Boild the ribs til they are cooked. 

Prepare Watkins Honey Barbeque Sauce as directed on label.  Baste ribs with the Watkins Honey Barbeque sauce and grill.  (continue to baste as you grill)

These ribs will literally fall off the bone, and you will be wishing you had made more.  Tony Roma's has nothing on us!

Watkins Burgers

We love bbq'ing in our family.  And burgers are always the easiest and cheapest, but not always the tastiest.....that was until we created WATKINS Burgers.  Now even our 2 year old cleans her plate.


Watkins Burgers

1 lb ground beef
3 Tbl. WATKINS Meat Magic
2 Tsp. WATKINS Ground Beef Seasoning
1/3 C. Instant Potato Flakes

Mix all ingredients together and form into patties.  Cook on the stove or grill til done. 


These are SOOOO juicy!

In the month of June, the Vigil's Watkins Team will be adopting military personnel deployed overseas fighting for our Country and well as those here at home.  The idea was inspired by a new customer who called us and told us that his nephew who was deployed over in Iraq had requested that he send him 2 cans of Watkins Black Pepper.  It got us thinking about what else they might want/need from Watkins. 

 

Did you know that Watkins can ship to an APO address?  YEP, directly from their warehouse.  Do you have a loved one overseas, serving in our military?  Could they use some the products offered by Watkins?  (ie.  Sunblock, Aloe Vera Sunburn Gel, Lip Balms, Energy Bars, Sauces, Spices...etc.) 

 

Our team will be sending over care packages to our deployed military the entire month of June.  As well as offering discounts to military families in their local areas.

 

Why are we doing this?

 

 

v     To say thank you, that we are free to run businesses like this out of our homes.

v     To thank our deployed military for being away from their families, to keep our families safe.  

v     To lift their morale and make what they are doing a little easier, with some comforts from home. 

 

We are so proud of all our military and pray for them daily.  And this is just our way of saying THANK YOU!!
